Kitchari traditionally means a mix of grains and lentils. Basmati rice and mung dal together create a balanced food that is a good protein combination and is tridoshic. This complete food is easy to digest and gives strength and vitality. It nourishes all the tissues of the body. Kitchari is the preferred food to use when fasting on a mono-fast or while going through cleansing programs such as panchakarma. Kitchari is excellent for detoxification. In order to make Kitchari using our Kitchari spice mix use Pride of India Rice & Lentil Mixes. Wash the rice-lentil mix thoroughly with water. Then dd the 6 cups of water to the rice and dal and cook in rice cooker or covered on stovetop until it becomes soft (about 20 minutes). When the water starts to boil - add in the Kitchari Spice Mix (1.5tsp to 2tsp) and mix well with the rice and lentil mix. You can also prepare and add any vegetables or meats that suit your tastes. Cut them into smallish pieces and sautee with Kitchari spice mix. Then add to the cooked rice and dal mixture. Cook for extra 10 minutes and serve with yogurt.
